I specialise in fast, responsive sites so I tend to stick to CSS and HTML, but I also use Wordpress a lot so can use many of the shop and SEO plug-ins available there.
If you want to stick to Shopify or Wix to make it easier for you to access and edit that's no problem either. I already use them a bit, but I have a couple of colleagues who are experts and can help along the way too.

Unlike larger companies, the website name and hosting will always be registered in your name. You will always have complete control over the management of the account. Believe me, I've seen some companies held to ransom over this!
